Beer of the Month Club will explain the distinctions between the two main types of beer, Ales and Lagers. The primary difference is the temperature at which the beer is fermented. Ales are fermented at a higher temperature, around 65-75°F, with Lagers (the name comes from the German lagern, "to store") being fermented at a much cooler temperature, about 46-55°F.

The second difference is the type of yeast used in the fermentation process. Ales are generally brewed using top fermenting yeast. That means the yeast floats on the top surface of the beer for the first few days, then settles to the bottom. Lagers use bottom fermenting yeast, which doesn't float to the top surface before settling.
At the higher temperatures required for Ale brewing, the yeast produces significant amounts of flavor and aroma byproducts, resulting in a Beer of the month with slightly "fruity" compounds resembling apple, pear, pineapple, etc. Typical Ales have a sweeter, fuller body than Lagers. The cooler conditions of Lager brewing inhibit the natural production of esters and other byproducts, resulting in a "cleaner" tasting beer.
Lambic is a third type of beer that is far less common than Ales or Lagers. True Lambic is brewed only in the Payottenland region of Belgium . Yeast is specially cultivated for the fermentation of Ales and Lagers, but Lambic is fermented by wild yeast. This means the beer is exposed to the Belgian air, which naturally contains wild yeast and bacteria.
